Ingredients
  

  • 2 cups cooked chicken, shredded or chopped (rotisserie works great)
  • 2 ripe avocados
  • 1 small red onion, finely diced
  • 1 small cucumber, diced (optional for crunch)
  • 1 celery stalk, finely chopped (optional)
  • 1/2 cup cherry tomatoes, halved (optional)
  • 1/4 cup fresh cilantro or parsley, chopped
  • 1–2 limes, juiced (about 3–4 tablespoons)
  • 1–2 tablespoons olive oil
  • 1 small garlic clove, minced (optional)
  • 1/2 teaspoon ground cumin (optional, but delicious)
  • Salt and black pepper, to taste
  • Red pepper flakes or a pinch of cayenne (optional heat)

Method
 

  1. Prep the chicken: If using rotisserie, remove skin and bones, then shred or chop into bite-sized pieces. Aim for small, even pieces for the best texture.
  2. Make the avocado base: In a large bowl, add the avocado flesh. Mash with a fork until mostly smooth, leaving a few small chunks for texture.
  3. Add flavor: Stir in lime juice, olive oil, garlic, cumin, salt, and pepper. Taste and adjust the seasoning now so the whole salad is balanced.
  4. Fold in the mix-ins: Add chicken, red onion, cucumber, celery, tomatoes, and herbs. Gently fold until everything is coated but not mashed.
  5. Finish and serve: Taste again and add more lime, salt, pepper, or red pepper flakes if you like heat. Serve right away on toast, in lettuce cups, or with crackers.
