Sopapilla Cheesecake Bars - A Cinnamon-Sugar Favorite With Creamy Cheesecake

Ingredients
  

  • 2 cans (8 oz each) refrigerated crescent roll dough (or one 16-oz sheet of crescent dough sheets)
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar (for the filling)
  • 1/4 cup granulated sugar (for the topping)
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 1/2 cup unsalted butter, melted
  • Pinch of salt
  • Optional: honey for drizzling, a squeeze of fresh lime, or a dusting of powdered sugar

Method
 

  1. Preheat the oven. Heat to 350°F (175°C). Lightly grease a 9x13-inch baking pan or line it with parchment for easy lifting.
  2. Mix the cinnamon sugar. In a small bowl, combine 1/4 cup sugar with the cinnamon. Set aside.
  3. Make the cheesecake filling. In a medium bowl, beat the softened cream cheese, 3/4 cup sugar, vanilla, and a pinch of salt until smooth and fluffy, about 1–2 minutes.
  4. Lay down the first dough layer. Unroll one can of crescent dough and press it into the bottom of the pan. Pinch seams together to seal if using perforated dough.
  5. Spread the filling. Spoon the cream cheese mixture over the dough and spread into an even layer, reaching all corners.
  6. Top with the second dough layer. Unroll the second can of dough and gently place it over the filling. Pinch seams to seal and tuck edges slightly along the pan.
  7. Add butter and cinnamon sugar. Pour or brush the melted butter evenly over the top. Sprinkle the cinnamon sugar over all the buttered dough, covering completely.
  8. Bake. Place in the oven and bake for 28–35 minutes, until the top is golden and the edges are bubbling slightly.
  9. Cool, then chill. Let the bars cool at room temperature for 30 minutes. For the cleanest slices, chill in the fridge for at least 2 hours.
  10. Serve. Cut into squares. Finish with a light drizzle of honey or a squeeze of lime for a bright touch, if you like.
