Slow Cooker Pineapple Barbecue Meatballs - Sweet, Tangy, and Effortless

Ingredients
  

  • Frozen meatballs (beef, pork, turkey, or plant-based), about 2 pounds
  • Barbecue sauce, 2 cups (choose a brand you love)
  • Pineapple: 1 can (20 ounces) pineapple chunks in juice, not syrup
  • Pineapple juice, 1/2 cup (use reserved juice from the can)
  • Soy sauce, 1 tablespoon (or tamari for gluten-free)
  • Brown sugar, 1–2 tablespoons (optional, for extra sweetness)
  • Apple cider vinegar, 1 tablespoon (adds brightness)
  • Garlic, 2 cloves minced (or 1 teaspoon garlic powder)
  • Red pepper flakes, 1/2 teaspoon (adjust for heat)
  • Green onions, 2–3, sliced for garnish
  • Sesame seeds (optional garnish)
  • Cooked rice or slider buns, for serving

Method
 

  1. Prep the slow cooker: Lightly grease the insert or use a liner to make cleanup easy.
  2. Make the sauce: In a bowl, whisk barbecue sauce, 1/2 cup pineapple juice, soy sauce, brown sugar, apple cider vinegar, garlic, and red pepper flakes until smooth.
  3. Add meatballs: Place frozen meatballs and pineapple chunks in the slow cooker. Pour the sauce over the top and stir to coat everything evenly.
  4. Cook low and slow: Cover and cook on Low for 3–4 hours or on High for 1.5–2 hours, until the meatballs are heated through and the sauce is glossy.
  5. Thicken if needed: For a stickier glaze, remove the lid during the last 20–30 minutes, or stir in a slurry of 1 teaspoon cornstarch mixed with 2 teaspoons water and cook 10–15 minutes more.
  6. Finish and serve: Taste and adjust salt, heat, or sweetness. Garnish with sliced green onions and sesame seeds. Serve over rice, with roasted veggies, or in slider buns.
