Preheat and prep: Heat your oven to 375°F (190°C). Line a baking sheet with parchment or lightly coat with nonstick spray.
Open the dough: Unroll the crescent dough and separate it into 8 triangles.
Keep them on a flat surface with the wide ends closest to you.
Add condiments (optional): Stir mustard and honey together if using. Lightly spread a small amount on each triangle, leaving the edges clean.
Layer ham and cheese: Place one slice of ham and one slice of cheese on the wide end of each triangle. If the cheese is large, cut it to fit without too much overhang.
Roll tightly: Starting at the wide end, roll each triangle toward the tip.
Tuck in any loose edges so the filling stays put.
Brush and season: Arrange the rolls tip-side down on the baking sheet. Brush with melted butter and sprinkle a pinch of garlic powder or seasoning if desired.
Bake: Cook for 10–13 minutes, or until the rolls are puffed and golden brown and the cheese is melted.
Cool slightly and serve: Let them rest for 3–5 minutes. Serve warm with extra mustard or a creamy dipping sauce.
