Ingredients
  

  • 1 cup cottage cheese (2% or 4% for the creamiest texture; use lactose-free if needed)
  • 1/3 cup pumpkin purée (not pumpkin pie filling)
  • 1–2 tablespoons maple syrup or honey (adjust to taste; or use a zero-calorie sweetener)
  • 1 teaspoon vanilla extract
  • 1/2–1 teaspoon pumpkin pie spice (or 1/2 tsp cinnamon + pinch nutmeg + pinch ginger + tiny pinch clove)
  • Pinch of salt (enhances flavor)
  • 2–3 tablespoons milk (dairy or non-dairy) to loosen, as needed
  • Optional protein boost: 1 scoop vanilla or unflavored protein powder
  • Optional toppings: sliced banana, chopped pecans or walnuts, granola, chia seeds, hemp hearts, cacao nibs, a drizzle of almond butter, or extra cinnamon

Method
 

  1. Blend the base: Add cottage cheese, pumpkin purée, maple syrup, vanilla, pumpkin spice, and a pinch of salt to a blender or food processor.
  2. Adjust texture: Blend until completely smooth and airy, 30–60 seconds. If it’s too thick, add milk 1 tablespoon at a time until it’s creamy and spoonable.
  3. Boost protein (optional): Add protein powder and blend again. If the mixture thickens, splash in a bit more milk.
  4. Taste and tweak: Add more spice or sweetener if you like. A tiny extra pinch of salt can make the flavors pop.
  5. Assemble the bowl: Spoon into a bowl and add your favorite toppings. For crunch, go with granola or nuts. For extra creaminess, a swirl of nut butter is great.
  6. Serve: Enjoy immediately while it’s cool and fluffy.
