Prep the oven and pan: Heat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease lightly.
Hydrate the oats: In a large bowl, whisk pumpkin, eggs, honey, oil, milk, and vanilla.
Stir in the oats. Let sit 5 minutes so the oats soften.
Mix dry ingredients: In a separate bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
Combine gently: Add dry mixture to wet. Stir just until no dry streaks remain.
Fold in any add-ins. The batter will be thick.
Fill the cups: Divide batter evenly among the 12 muffin wells. They should be almost full for a nice rise.
Bake: Bake 16–20 minutes, until the tops spring back and a toothpick comes out with a few moist crumbs.
Cool: Rest in the pan 5 minutes, then transfer to a rack.
Cool completely for the best texture.
