Prep your pan: Heat oven to 350°F (175°C). Line a 12-cup muffin tin with liners or grease lightly.
Whisk dry ingredients: In a large bowl, whisk flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
Mix wet ingredients: In a separate bowl, whisk pumpkin puree, eggs, maple syrup, olive oil, applesauce, and vanilla until smooth.
Combine gently: Pour wet into dry.
Stir with a spatula just until no dry streaks remain. Do not overmix. Fold in any mix-ins.
Fill the cups: Divide batter evenly among the muffin cups, filling each about 3/4 full. Add toppings if using.
Bake: Bake 18–22 minutes, until the tops spring back and a toothpick comes out with a few moist crumbs.
Cool: Let muffins rest in the pan for 5 minutes, then transfer to a rack to cool completely for best texture.
Serve: Enjoy warm or at room temp.
