Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking pan or line it with parchment, leaving overhang for easy lifting.
Unroll one can of crescent dough and press it into the pan.
Pinch seams together to make a smooth bottom crust.
In a mixing bowl, beat cream cheese with 3/4 cup sugar, vanilla, and a pinch of salt until smooth and fluffy, about 1–2 minutes.
Spread the cream cheese mixture evenly over the bottom crust. Take your time so it reaches all corners.
Unroll the second can of crescent dough. Lay it gently over the filling, pinching seams to create a smooth top.
Stir together 1/2 cup sugar and 1 1/2 teaspoons cinnamon.
Brush the top with melted butter, then sprinkle the cinnamon sugar evenly over the surface.
Bake for 28–35 minutes, until the top is golden and the edges are bubbling slightly. The center should look set, not jiggly.
Cool on a rack for 30–45 minutes, then refrigerate at least 2 hours (overnight is best). This helps the bars slice cleanly.
Slice into squares or rectangles.
Serve chilled or slightly warmed, with a drizzle of honey if you like.
