Ingredients
  

  • 1 box (about 15.25 oz) spice cake mix (yellow cake mix also works—add spices below)
  • 1 can (15 oz) pumpkin puree (not pumpkin pie filling)
  • 1–2 teaspoons pumpkin pie spice (only if using yellow cake mix; optional extra if using spice cake)
  • 1 teaspoon vanilla extract (optional, but nice)
  • Pinch of salt (balances sweetness)
  • Optional mix-ins: 1/2 cup chocolate chips, chopped nuts, or dried cranberries
  • Optional toppings: coarse sugar, streusel, or a light glaze

Method
 

  1. Prep the pan: Heat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease.
  2. Mix the batter: In a large bowl, stir together the cake mix, pumpkin puree, vanilla, and salt. If using yellow cake mix, add pumpkin pie spice. Fold just until combined. The batter will be thick.
  3. Add extras: Gently fold in any mix-ins, like chocolate chips or nuts. Don’t overmix.
  4. Fill the cups: Divide the batter evenly among the muffin cups, filling each about 3/4 full. Sprinkle coarse sugar or streusel on top if you like.
  5. Bake: Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  6. Cool: Let the muffins rest in the pan for 5 minutes, then move them to a wire rack to cool completely.
