Ingredients
  

  • 1 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger (optional)
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 2 large eggs, room temperature
  • 1/2 cup neutral oil (vegetable, canola, or light olive oil)
  • 1/4 cup milk (dairy or unsweetened almond milk)
  • 1 teaspoon vanilla extract
  • Optional mix-ins: 1/2 cup chocolate chips, chopped pecans, or raisins
  • Optional topping: coarse sugar or a light cinnamon-sugar sprinkle

Method
 

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger until well combined.
  3. In a separate bowl, whisk the pumpkin puree, eggs, oil, milk, and vanilla until smooth.
  4. Pour the wet ingredients into the dry ingredients. Stir gently with a spatula just until no dry streaks remain. Do not overmix—a few small lumps are fine.
  5. Fold in any optional mix-ins. Divide the batter evenly among the muffin cups, filling each about 3/4 full. Sprinkle tops with coarse sugar if using.
  6. Bake for 18–22 minutes, or until the tops are set and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  7. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to finish cooling. Enjoy warm or at room temperature.
