Ingredients
  

  • 1 (8 oz) block cream cheese, softened
  • 1 cup coconut milk (canned, well-shaken) or whole milk for a milder flavor
  • 1 (3.4 oz) box instant vanilla pudding mix or instant coconut cream pudding
  • 1/2 cup sweetened shredded coconut, plus more for topping
  • 1/3 cup powdered sugar (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon coconut extract (optional but boosts flavor)
  • 1 (8 oz) tub whipped topping (like Cool Whip), thawed, or 2 cups lightly sweetened whipped cream
  • Pinch of salt to balance sweetness
  • Dippers: vanilla wafers, graham crackers, shortbread, strawberries, pineapple chunks, or apple slices

Method
 

  1. Toast the coconut: In a dry skillet over medium heat, cook 1/2 cup shredded coconut, stirring often, until golden and fragrant, 3–5 minutes. Let cool.
  2. Beat the base: In a mixing bowl, beat softened cream cheese with powdered sugar and a pinch of salt until super smooth and fluffy.
  3. Mix the pudding: In a separate bowl, whisk instant pudding with coconut milk until thick, about 1–2 minutes.
  4. Combine: Beat the pudding mixture into the cream cheese until no lumps remain. Add vanilla and coconut extract.
  5. Fold in: Gently fold in whipped topping and most of the toasted coconut, saving some for garnish. Taste and adjust sweetness.
  6. Garnish and serve: Spoon into a serving bowl, sprinkle with remaining toasted coconut, and serve right away or chill for 30–60 minutes for a thicker set.
