Crustless Pumpkin Pie - Cozy, Creamy, and Easy to Make

Ingredients
  

  • Pumpkin puree: 1 can (15 ounces), 100% pumpkin
  • Large eggs: 3
  • Milk or half-and-half: 1 cup (use evaporated milk for a classic pie taste)
  • Granulated sugar: 1/2 cup
  • Brown sugar: 1/4 cup, packed
  • Vanilla extract: 1 teaspoon
  • Pumpkin pie spice: 2 teaspoons (or 1 1/2 tsp cinnamon + 1/4 tsp ginger + 1/4 tsp nutmeg + pinch of cloves)
  • Salt: 1/2 teaspoon
  • Cornstarch: 2 tablespoons (helps set the custard)
  • Butter: 2 tablespoons, melted and slightly cooled (optional for richness)
  • Whipped cream: For serving (optional)
  • Nonstick spray or butter: For greasing the pie dish

Method
 

  1. Preheat and prep: Heat oven to 350°F (175°C). Grease a 9-inch pie dish with nonstick spray or butter.
  2. Mix dry ingredients: In a small bowl, whisk sugar, brown sugar, pumpkin pie spice, salt, and cornstarch until no lumps remain.
  3. Whisk the wet base: In a large bowl, whisk pumpkin puree, eggs, milk (or evaporated milk), vanilla, and melted butter until smooth.
  4. Combine: Sprinkle the dry mixture over the wet ingredients and whisk until fully blended and silky.
  5. Pour and smooth: Pour the batter into the prepared pie dish. Tap gently on the counter to release any bubbles.
  6. Bake: Place on the middle rack and bake 45–55 minutes. The edges should be set, and the center should wobble slightly like gelatin.
  7. Cool: Set the pie on a rack. Let it cool at room temperature for at least 1 hour to finish setting.
  8. Chill for best slices: Refrigerate 3–4 hours or overnight for clean cuts and deeper flavor.
  9. Serve: Slice with a sharp knife, wiping between cuts. Top with whipped cream or a sprinkle of cinnamon.
