Prep the chicken: Use shredded rotisserie chicken or chop cooked chicken into bite-size pieces. Aim for tender, not dry.
Mix the dressing: In a small bowl, whisk olive oil, lemon zest and juice, Dijon, garlic, honey (if using), 1/2 teaspoon salt, and a few grinds of black pepper until glossy.
Chop the veggies: Dice avocado, chop cucumber, halve tomatoes, and finely chop red onion.
Add to a large bowl.
Add herbs: Sprinkle in cilantro/parsley and chives. They brighten everything up.
Combine gently: Add chicken to the bowl. Pour over the dressing and toss gently with a spatula to avoid mashing the avocado.
Adjust and finish: Taste and add more salt, pepper, or a squeeze of lemon.
Stir in red pepper flakes if you like heat.
Serve your way: Spoon over arugula or spinach, pile onto toast, tuck into lettuce cups, or wrap in a tortilla. Top with toasted nuts or seeds for crunch.
