Chicken Avocado Salad Everyone Is Obsessed With - Fresh, Creamy, and Satisfying

Ingredients
  

  • Cooked chicken breast or thigh, shredded or diced (about 3 cups)
  • 2 ripe avocados, diced
  • 1 small English cucumber, chopped
  • 1/3 cup red onion, finely chopped
  • 1/2 cup cherry tomatoes, halved (optional but great)
  • 1/4 cup fresh cilantro or parsley, chopped
  • 2 tablespoons fresh chives or green onion, sliced
  • 1 large lemon (zest and juice) or 2–3 tablespoons lime juice
  • 3 tablespoons extra-virgin olive oil
  • 1–2 teaspoons Dijon mustard
  • 1 small garlic clove, grated or minced
  • 1/2 teaspoon honey or maple syrup (optional, to balance acidity)
  • Salt and black pepper
  • Red pepper flakes (optional, for heat)
  • Handful of arugula or baby spinach (optional, for serving)
  • Toasted sliced almonds or pumpkin seeds (optional, for crunch)

Method
 

  1. Prep the chicken: Use shredded rotisserie chicken or chop cooked chicken into bite-size pieces. Aim for tender, not dry.
  2. Mix the dressing: In a small bowl, whisk olive oil, lemon zest and juice, Dijon, garlic, honey (if using), 1/2 teaspoon salt, and a few grinds of black pepper until glossy.
  3. Chop the veggies: Dice avocado, chop cucumber, halve tomatoes, and finely chop red onion. Add to a large bowl.
  4. Add herbs: Sprinkle in cilantro/parsley and chives. They brighten everything up.
  5. Combine gently: Add chicken to the bowl. Pour over the dressing and toss gently with a spatula to avoid mashing the avocado.
  6. Adjust and finish: Taste and add more salt, pepper, or a squeeze of lemon. Stir in red pepper flakes if you like heat.
  7. Serve your way: Spoon over arugula or spinach, pile onto toast, tuck into lettuce cups, or wrap in a tortilla. Top with toasted nuts or seeds for crunch.
